Luigia restaurant receives the plaque for the true pizza napoletana

On 12 November 2019, the renowned restaurant Luigia in Zurich (Talstrasse 61, 8001 Zürich) receives the plaque from the Associazione Verace Pizza Napoletana (AVPN), based in Naples, for having fully met the requirements of the specification of the true pizza napoletana. With number 802, Luigia Zurich has won a little place on the portal www.pizzanapoletana.org, the AVPN's reference site where it is possible to find all the characteristics needed to define a pizza napoletana as such. There are very precise rules, first transmitted orally by popular tradition, then finally codified to distinguish a typical pizza napoletana from the others existing in Italy. For example, it must have a rounded shape, with a diameter that must not exceed 35 cm; the edge must be raised, also called “cornicione”, puffy and free of burns, of about 1-2 cm, and finally it must be soft and fragrant according to a precise leavening and correct use of all the ingredients. Once removed from the mixer, the dough is left to rest covered with a damp cloth so that the surface cannot harden. Once the necessary time has passed, one moves on to shaping the dough ball, obligatorily by hand, and it is divided into balls that must once again rest for fermentation. Thanks to a precise movement from the centre outwards, a disc of dough is formed, which can be topped with foods preferably of Campanian origin.
